Rafael owns the farm and guided us himself, so we got a first-hand account of what starting one takes. We walked past seedlings, young trees and mature ones carrying ripe fruit, with the harvesting explained as we went. It ended on a tasting of their own chocolate and a cup of husk tea, both of which you can buy.

The drive up into the mountains would be worth the fare on its own. We stopped at a waterfall with water clear enough to see the bottom and plants growing wild around it. The coffee at the farm followed a good morning rather than competing with it.

Unusual, warm and genuinely educational, and Sebas was the best guide we had all week. One thing to know: the mountain roads are extremely twisty, so bring something for travel sickness if you are prone to it.

Edward was a good driver and guide with plenty to say about the island. The booking slot we were given did not match the operator's own departure time, and that cost us the start of the morning. Confirm the departure time before you travel; ours reimbursed the taxi.

Our guide was pleasant but could not answer much about the coffee farm itself. The guided walk there is run by the hacienda's own staff and only on Friday, Saturday and Sunday, so the day you pick decides whether you get it. Worth settling before you book.
